The Bodhi Tree Vegan Nursery School, A Taste of Heaven

The Bodhi Tree Nursery, a Vegan Montessori School in London, UK, for pupils from18 months to 5 years old. Bodhi Tree Nursery not only focuses on the Montessori methods, but also develops kindness and compassion through exploring various spiritual teachings from around the world, including Buddhism. At the Bodhi Tree Nursery, Ms. Mediony prepares fresh vegan meals and snacks for the children every day. Each delicious home cooked meal is created from seasonal grains, fruits and vegetables, 90% of which are organic. No sugar is used, apart from a small amount of maple syrup. And the children happily help to grow, pick, and prepare some of the food. “We get them involved in the whole process of food and preparation of food. We introduce various vegetables and talk about the color, the shape.” Bodhi Tree Nursery not only teaches children using the Montessori Education Method, but it also incorporates positive philosophies, including veganism, in the program. “We were looking for a ‘home away from home’ environment; we’re pleased to say this was definitely the case.” “The food is mind blowing: home-cooked delicious, fresh vegan meals every day. Even the picnics were amazing!”

Green Vegan Outing, Part 1 of 2 - Making Ciabatta Sandwich and Vegan Korean Tteokbokki

00:18:11

Green Vegan Outing, Part 1 of 2 - Making Ciabatta Sandwich and Vegan Korean Tteokbokki

Today we are happy to have a Korean family, the Kim’s, on our show. Both parents and the two lovely girls are vegan. They will share their eco-friendly outing experience in the countryside and demonstrate how we can cook and enjoy wholesome and delicious home-cooked meals such as a Ciabatta Sandwich and traditional vegan Korean Tteokbokki (stir-fried rice cakes). The Ciabatta bread is cut into half and they spread vegan butter on one side and strawberry jam on the other side. Then we see the girls add the ingredients layer by layer, and then add more mustard sauce at the end, and the sandwich is now ready. Tteokbokki, or stir-fried spicy rice cakes, is a popular food in Korea made of small cylinder-shaped rice cakes. When the water boils, add the brown rice cakes. The sauce contains ground red pepper, olive oil, a little sugar, bamboo salt, and some savory sesame seed powder. I’m going to add some (vegan) fish cakes to make it more delicious. Next, the green pepper and cabbage are cut and added to the pot. Slice the tangerine a bit and add it at the end.

A New Epithet for Hangzhou - The Veg Capital of Southeastern China, Part 1 of 2

Located in southeastern China, the coastal city of Hangzhou is well-known since ancient times for the flourishing development of Buddhism, and has long been reputed as the “Buddhist Capital of Southeastern China.” Its history of the plant-based diet can be traced back even further. During that time, many truth seekers came to Lingyin Temple to pray to be cleansed, gain wisdom, learn and embrace a plant-based diet, while searching deeply for their true nature. In 2016, the “Xiangji Vegetarian Culture” was designated as an “Intangible Cultural Heritage” of Hangzhou City, paving a very important milestone for veg development in China. Talked about far and wide, Yu Hua Zhai is a free-to-dine vegan restaurant! Here, the vegan culture has been elevated from compassion for all beings, to the selfless awareness that the whole universe is connected as One. Located next to the Xixi Wetland in Hangzhou, “Wukong’s Home” is housed in an old and simple structure of unique tranquility. Governmental support has greatly contributed to the prosperous development of the veg industry in Hangzhou today. What has made it even more encouraging is, in 2017, the city government published a book called “Veg in Hangzhou - Food Discovery in Southern China”. “We hope that the industry will integrate the rich veg cultural tradition with the scientific concept of a healthy and green veg diet, and strive to establish the city as the ‘Veg Capital of Southeastern China.’”

Vegan Costa Rican Traditional Cuisines, Part 1 of 2 - Gallo Pinto & Handmade Tortilla

Today, we are honored to have Marianella with us. She will show us how to make the vegan version of traditional Costa Rican breakfast, Gallo Pinto, as well as handmade tortillas that are popular in Central America. Marianella is the owner of the Green Vurgers Restaurant, a small vegan restaurant located in San Pedro, San José, Costa Rica. As its name suggests, Green Vurgers specializes in offering vegan burgers as a way of introducing veganism to the general public. “The main feature of the Gallo Pinto is its vibrant colors. You can see the red, brown from the beans and lots of the greens. It is very appetizing. Now we are going to make handmade tortillas from Central America. First, we roll the dough into balls. We can use any type of container to flatten the tortilla dough. We grease it with a little「olive oil」. There it is. This tortilla, when it moves easily, it means that it is ready. We can see that this type of breakfast is quite substantial.”

The Art of Creating Vegan Flower Jelly to Celebrate the 3rd International Artist Day, Part 1 of 2 – The Auspicious Peony Flower

The carving of flower jelly uses needles or special nozzles attached to syringes, which make it appear as if flowers are blooming inside the transparent jelly. The nozzles with different shapes are used to inject natural coloring into the jelly and form various gorgeous flowers with artistic designs. Vegan Chef Lin Fang-Yun, has over 20 years’ experience in promoting organic plant-based food. Recently she received the first prize in an international competition with her flower jelly. She also engages in flower jelly teaching and competition judging. Let’s now watch how she makes the colorful flower jelly! Green Vegan Outing, Part 2 of 2 - Korean Bulgogissam, Veggie Protein Barbecue, and Vegan Fish Cake Soup

00:19:45

Green Vegan Outing, Part 2 of 2 - Korean Bulgogissam, Veggie Protein Barbecue, and Vegan Fish Cake Soup

The family is now preparing dinner in an area where campfires are permitted and are preparing a variety of skewers for the barbecue. The family starts their dinner with the first dish, which is Bulgogi. Bulgogi literally means “fire (vegan) meat” in Korean and is a very popular dish. Plant-based Bulgogi consists of marinated soy protein cooked on a grill, or stir-fried in a pan. To make the dish tastier, add more mushrooms and vegetables. Koreans enjoy Bulgogi wrapped in leafy vegetables, which is called Bulgogi Wraps. It is often accompanied by a condiment known as Ssamjang, made with fermented soybean paste, red pepper paste, and sesame oil. The next dish is Vegan Fish Cake Soup. In a Dutch oven, add homemade vegan broth and boil it. Then add the skewered plant-based fish cakes. This vegan broth is made by putting kelp and shiitake mushrooms in water and cook them for a long time. If you add in shiitake mushrooms, red peppers, and wormwood, it will look mouth-watering and taste yummy. We hope this two-part show will inspire you to adopt a sustainable vegan lifestyle.

A New Epithet for Hangzhou - The Veg Capital of Southeastern China, Part 2 of 2

With the natural advantage of its geographic location and favourable temperate conditions, the Hangzhou City government, in recent years has been leading the effort of promoting the veg culture development nationwide, as well as reaching out globally, with a new epithet for the city - “The Veg Capital of Southeastern China.” In May 2019, one of the world’s largest vegan lifestyle expos known as Veggie World - which is currently held in 18 cities across eight countries - chose Hangzhou as its first point of entry into China. This eye-opening expo introduced Chinese consumers to the global vegan trend, and the healthy, green, and natural vegan lifestyle. To celebrate International Vegetarian Day, the city’s Commerce Bureau sponsored the fourth Hangzhou Vegan Culture Festival in November, 2019. The event was organized by the Hangzhou Vegan Association and held at the Xiangji Temple square. Many fascinating activities were held, such as food tasting, introduction of the benefits of eating veg, and cultural exchanges, encouraging Hangzhou citizens to follow the compassionate trend of a plant-based diet. “And if Chinese blaze the trail on vegetarianism, then we will have hope. We have more hope, a lot more hope to save this Earth for our next generations, so that they live in health, happiness, and possibly spirituality.”

She will also make a creamy tomato soup with the smoky flavor. “Let’s make the burrito now. We take the wheat tortilla, and meanwhile, we turn on the heat. This is the salad to put in the burrito. Let’s wrap our burrito and put it in the pan for some time to warm it up.” “Let’s fry these vegetables and the tortillas with some oil. We will let it release its fragrance a little, and then we put it into the blender with a little water. We add the chickpeas and our [stir-fried] mixture in the blender….” “Our lunch is ready, the gallo pinto burrito and the tomato soup. You can see that it is filled with protein, both from the chickpeas and the beans.”

Sharing Love Through Food: Loving Hut on Lake Klopein, Austria, Part 3 of 3

We’ll start by exploring how staff members created a “Vegan paradise”at the Loving Hut, thanks to Supreme Master Ching Hai’s thoughtful advice on protecting our environment and all living organisms. Supreme Master Ching Hai gave the Loving Hut staff specific tips on how to minimize plastic usage at the Hotel, as well as other recommendations for cleaning in a highly hygienic, yet environmentally-friendly way. While visiting the Hotel, Supreme Master Ching Hai provided helpful hints on recycling organic waste as well as garden care. Let’s continue by listening to Supreme Master Ching Hai, as She shared precious insights about the connection between spiritual practice and work, during Her discussion with staff of the Loving Hut Vegan Hotel in July 2016. “Use the work as one of the practicing methods. You have to know that. Anything you do, you just have to think of the relation to karma. Call it karma Yoga. So, take every opportunity and always recite the Five Holy Names when you’re working. That also counts like meditation, understand? Also, it cleans your karma and prevents negativity from entering your being.” We deeply appreciate Supreme Master Ching Hai for giving us the opportunities to work in a pure environment that benefits our spiritual growth. Thus, we will continue to learn and do the best to deserve Her immense love and infinite sacrifice.

Plant-powered Athletes Unleashed, Part 2 of 2

Athletic training and performance requires a vast amount of energy to fuel the body, and many people like to know what to eat on a plant-based diet. “My first recommendation is to add more unrefined, plant-based products, starting with fruits and vegetables definitely, which is what our society is so deficient in.” The Vegan Power Athlete group stands for more than just winning races and medals; it also promotes the realization of the power to be a voice for the well-being of our animal friends, humans, and our planet. “It is a world full of injustices in which, I believe we have to make a change. For me, being an athlete is not having to consume products that are destroying our planet, that are taking the life of someone innocent. Give other sentient beings, like us, the rights we ask for:freedom, love, and happiness.” “Well, my message would be that we wake up and raise our conscience, that we are really reasonable and intelligent beings, who know how to make the best decisions.” “There is nothing we cannot get with a plant-based diet.”

The Vegan Princess's Kitchen, Part 2 of 2 - The Lovely Jackfruit Tacos with Avocado Slaw and Vegan Cheese Sauce

Let’s now enjoy their cooking demonstration. The finale of the jackfruit and taco. Here we go. We’re going to turn it on. We’re going to start by taking a can of jackfruit. And then we’re going to throw in 32 ounces (950 milliliters) of vegetable broth. Turn your pot on high. And then we’re going to add in two tomatoes, chopped, and also one jalapeño, one serrano pepper. And then a pinch of salt. And then we have two tablespoons of paprika. And then we’re going to add three tablespoons of Bragg’s Coconut Aminos, organic, of course. This is a South African smoke blend. And then a chili-lime seasoning blend. You guys can season together. Double time! You’re going to fill your taco with your jackfruit mixture. May we have some slaw? And then you're going to drizzle your (vegan) cheese sauce. Like that. There’s your taco.
