Today we are sharing the achievements and successes of a courageous and noble man, Mr. Kuntal Joisher, the world’s first vegan to scale Mt. Everest. His climbing journey of the Himalayas started in 2009. With his persistent determination and fortitude, Mr. Kuntal stood on the top of Mt. Everest, the highest peak in the word, in May, 2016, from the Nepal side and again successfully in 2019, from the China side. “Sitting here right now, it’s almost been seventeen years that I have now been a vegan. And I have to tell you, that this was the best decision I have ever made in my life, because since that day I have been able to sleep every single night peacefully, knowing that o animals had to be killed for me to lead my life or me to pursue my dreams. It was a chance encounter in 2009, where I actually found that climbing mountains was the calling of my life. Mt. Everest simply cannot be conquered. It is always the mountain that decides whether you are going to make it to the top. So, it was during this journey, that I overcame so many of my self-doubts, so many of my limitations, and I conquered myself.”

Mr. Adams transformed from being a type 2 diabetic to being healthy, fit and vibrant, through a whole-foods, plant-based diet. “I’m the Brooklyn Borough president in New York City. I always exercised but my diet was horrendous.” Mr. Adams’s food choices led to some serious health problems. “And when I started that diet, in three weeks, my vision returned. And after three months, my diabetes went in remission, my nerve damage went away, my cholesterol normalized. I had a small ulcer, the ulcer went away. And all of this without medicine. And not only does it help you physically, but it also helps you emotionally and spiritually as well.” When Mr. Adams saw the dramatic, positive improvements in his health and well-being, he wanted to share the goodness with his family and with his community. One of the steps the Borough President took was to introduce Meatless Mondays into schools. Eventually the program expanded to all New York City schools. “The end goal is to wean us off of the over-consumption of meat, that we have in this country and across the globe.”

Mr. Adams has a much bigger vision for the youth, for his city, and for the world. “There's no reason we cannot have rooftop gardens in all of our schools, while children can grow their food and then serve it down in their cafeteria. We need to get all meat out of our schools; all cheese, all dairy products, all milk out of the schools. I think it’s so important that we engage in the real conversation about climate change and not try to sugarcoat the issue. The real culprit is overconsumption of meat, the overconsumption of beef. We were successful here in New York City, where we got processed meat out of our schools and a 50% beef reduction, but we need to go further. We’re saving not only Molly the cow but Dolly our child.” He also saw that community support is an important factor for success in the transition to a plant-based diet. “Building the community is so important. That is why every three months, we hold a vegan, plant-based meet-up here at Borough Hall, where several hundred people come out and they interact with each other. They talk with each other.

In today’s program, we will introduce Fiorella Migliore, a Paraguayan model, beauty queen, actress, television presenter and vegan activist. Fiorella, or Fio, won the 2008 Miss Italia Paraguay and the 2012 Miss World Paraguay. Learning about the direct impact of our food choice on the environment and health first-hand, Fio felt obliged to raise awareness about it to her fellow Paraguayans, so she partnered with Kip Anderson to produce a documentary, From Paraguay With Love. Paraguay With Love focuses on the environmental and humanitarian crisis happening in Paraguay due to “The Green Revolution,” Which is the rapid expansion of soy agri-faming in the Gran Chaco Forest, the second largest forest in South America next to the Amazon. Fio hopes to educate the public on their food choices, which has caused the deforestation of Paraguay, and has forced more than 585,000 people to leave their land in the last ten years. Also, the health-hazards of pesticides have caused many serious diseases, and even deaths. We are hopeful that Fio’s message will be heard and that it will create a ripple effect on farming, as more farmers are switching from livestock raising to organic vegetable farming, not only in Paraguay but all around the world.
