Here’s a tip on how you can store opened tofu. Set the tofu in a container with an airtight lid and add just enough clean, filtered water to cover the tofu’s surface. Store it in the refrigerator and keep it fresh by changing the water daily. If you want your tofu to remain fresh for a week, cut into slices and simmer in boiling water for approximately 2-3 minutes. Once the tofu has cooled, take it out, place it in a food container and pour cold water over it. Add 3 grams (1/2 teaspoon) of salt to preserve the texture of the fresh tofu. The most common tofu spoilage signs include sour smells, discoloration, or a slimy coating on the surface. Discard the tofu if you notice any of these signs.
