“The enzyme is the important thing. In the Eastern medicine, the Chinese physicians, they call it ‘Chi.’ Chi is the life force. I think in Yoga language, they call it ‘Prana.’ It’s the same thing. And I only recently learned there are something like seven to ten types of Chi. I didn’t know that, so that was new. So, anyway fruit, its life is rich in Chi, so that’s why we want to preserve that.
