Have you got a favorite herb for your meals? Mine is eucalyptus; what is yours? Here is a tip on how to properly dry and store fresh garden herbs to preserve their flavor throughout the year. Certain herbs like dill, bay, oregano, thyme, rosemary, marjoram, and summer savory, are particularly suitable for air drying because of their low moisture content. These herbs dry fast and maintain their flavor well. It is best to harvest your herbs in the late morning and prior to them blooming. When you gather the cuttings, make sure there’s proper air circulation to decrease the risk of mold. In order to maximize freshness and retain flavor, store the herbs in airtight containers and place in cool, dark areas. They can be preserved up to a year if dried properly.
