At the 91st annual US Conference of Mayors, over 1,400 mayors rallied behind a resolution backing the plant-based diet. This diet centers on a “plant-predominant eating pattern” with whole, minimally processed foods like fruits, vegetables, nuts, seeds, and legumes. The resolution was adopted as a strategic response to mounting concerns linked to global warming, chronic health conditions, and rising healthcare expenses.

New York City has been promoting plant-based dietary programs within its institutions, like agencies, schools, nursing homes and hospitals. Similarly, the state of California is providing US$100 million to facilitate its schools in offering plant-based meals to students.
