Toasting dry pasta before boiling enhances both its flavor and texture. Toasted pasta develops a firmer texture, holds its shape, and provides a rougher surface that helps sauces cling better. Spread sturdy wheat-based pasta, such as spaghetti, bucatini, or penne, on a baking sheet and roast it at 400 degrees Fahrenheit (205 degrees Celsius) for 8 to 12 minutes, until golden brown and fragrant. Be careful not to let the pasta burn. During roasting, browning reactions occur on the pasta’s surface, creating a nutty flavor while leaving the interior completely uncooked; therefore, the pasta still requires boiling. Because roasted pasta absorbs less moisture during cooking, it may take a little longer than the instructions recommend to reach the desired texture, so test it first before draining. Delicate pastas, such as capellini, and many gluten-free rice-based pastas are generally less suited to roasting because of their finer structure and different composition. Whether you’re preparing a simple tomato sauce or a rich vegan Alfredo, toasting your pasta first is an easy way to add flavor and elevate your favorite pasta dishes.
