Today, we are lucky to have a glimpse of those days in Yang Ming Mountain in 1992, when Supreme Master Ching Hai set aside Her precious time to demonstrate a simple and aesthetically pleasing dish: “Vegan Bachelor’s Pot.” “Now I’ll show you how to cook. It is very simple. Whatever vegetables that are available, you can throw them in. It doesn’t have to be these particular vegetables. Just similar ones are fine. Basically, it’s like that. So, whatever you like, throw them in. Cut them all up and stir fry it in some oil. After stir frying it, simmer it for a while. Then, just add more water. Add water and seasonings and simmer for about 20 minutes.” “These are wheat gluten. You can use any kind of gluten you like. These are the proteins, mix the protein and vegetables together. You can use any combination of (vegan) protein and vegetables. You can also use coriander or toon leaves to replace onions. You can also add basil. This dish is called ‘Bachelor’s Pot.’ You see, when I was single, this was what I had every day.” “What’s great about this? Well, you don’t have to wash vegetables and cook every day. You only need to wash once and cook once, and you’re set for three, four, or five days.” “When cooking, don’t talk like me and remember to recite the Five Holy Names. They are the best seasoning.” “I think it’s better to add the seasonings first, let it simmer, then add water. That way, the flavors will get into the food. But keeping it in the fridge for a few days will also enhance the flavor. So, don’t worry. How much salt you put in depends on your taste. I think I’ll just add a little. With heartfelt gratitude, we sincerely thank Supreme Master Ching Hai for sharing with us these wonderful vegan dishes and easy cooking tips. Today, we joyfully present Supreme Master Ching Hai’s “Vegan Pancakes.” “This is like half a kilogram of non-clumpy flour. It's like a self-raising flour. And then a quarter-liter of soya milk. And half a teaspoon of salt. And just pour the soya milk in it. You can sieve the flour in advance, but you don't have to do too many things; just make it simple. We beat it up now and again, again, so the lumps all disappear, and we can leave it standing for 10 to 20 minutes. If you put just soya milk, then it's softer. Or, just my experiences are like that. After 15 minutes, we cook this. Now you put in a little bit more oil, like one tablespoon, more or less. That should be OK. And distribute it evenly. And put in again. Let it run around a little bit to distribute the batter and oil evenly, like that. After it’s all even, you just close the lid and wait for maybe a minute or so. You have to always check it. After a while, you check it, see if it’s brown already. There you are. Very good. You guys eat it. Put lemon or whatever you want.” (Pretty good.)

Soak it in water until soft like this. And then add the seasonings. Very simple. OK. That’s it. Then, mix it by hand or use chopsticks. Now heat up some oil in the pot. When the oil is heated, toss everything in and stir-fry it until it is all cooked thoroughly. Then, it’s ready to serve. OK, it is done. See, it is very simple. It smells delicious.” “When you cook, you should be happy, be loving, and recite the Five Holy Names. Even if you don’t practice Quan Yin Method, recite the name of Buddha, Jesus Christ, or any religious leader, or your own mantra. It’s better not to gossip or think nonsense while cooking so that the food has more blessings. Your reciting will bring blessings to the food. Today we’re going to make some kind of breakfast, Spanish-style. And we have tomatoes, two medium-sized, and we have coriander. And we have some French bread. But you can have any other (vegan) bread. You can cut them into a shorter size, easy to cook. And you cut them into half, the bread, make it ready. And the super-melting cheese, or cheddar-style cheese, they’re all vegan. And tomato, you can have, one is enough for today. It’s mashed tomatoes! OK, we can butter the bread; vegan butter. And you put one slice of (vegan) cheese on one of the slices of the bread. Now for the cheese bread, you put some tomato on it, very thin tomato on top of the cheese. Then you put a little coriander on the cheese. The rest of the tomatoes can put on the buttered piece of bread. So we are going to put all this bread in here. Now we are going to put the bread in the oven. Very fast. Oh! Ten minutes, done. So, a very nice simple quick breakfast, tasty, delicious, and groovy, very groovy breakfast. There is my favorite breakfast.

Today, we’re going to prepare a very simple, quick, tasty snack for yourself and your family. And we preheat the pan. Now we’re going to warm the tortillas in that pan. When it’s golden brown like this on one-side, that should be done; you turn to the other side and do the same stuff. Now, we put it on the plate here. Now, it’s up to you to smear (vegan) butter on your crispy, warm tortilla or not. It would taste delicious without butter at all. Now what we do is throw the tomatoes on it. Now you just spread the onions (optional) that you sliced earlier. Just spread them on top of the tomatoes. Now, we're using black pepper and salt. Use just like a quarter of a teaspoon, more or less. Now, you put the peppermint on top of the tortilla, tomatoes, and onions. You can sprinkle a little Maggi on top, and there, here it is! This is the end; you enjoy it already. It’s very quick and absolutely tasty. Very tasty.

The most simple basic food for nutrition and good taste, takes only a few minutes to prepare. See, if you eat this brown rice and mung beans in it. And then with the tofu and with the salad, watercress and soya sprout salad, and the (vegan) cheese, that is a perfect meal Already.

Pumpkin Soup with Tofu and Crushed Raw Peanuts

This kind is home cooking. Cut the tofu, vegan ham and pumpkin into cubes. If you don’t have any machine, chop the peanuts with the back of a knife. Put one tablespoon of vegan butter in the pan, put in tofu, vegan ham and stir fry a little bit. Put in pumpkin, peanuts and one bowl of water, cook boil and simmer until the pumpkin is soft. Put in one cube of vegetable broth, a little pepper, two or three tablespoon of Maggi depends on your taste. If you like, when it’s almost cooked, put in two tablespoons powder to thicken the broth.
